Description
This High Protein Crispy Garlic Chicken Fried Rice is an easy, flavorful meal loaded with protein, vegetables, and aromatic garlic. Perfect for weeknight dinners or meal prep, itโs quick, satisfying, and packed with flavor.
Ingredients
- 2 cups cooked jasmine or basmati rice, preferably day-old
- 1 lb boneless, skinless chicken breast, cut into small pieces
- 4 cloves garlic, minced
- 2 tbsp olive oil or sesame oil
- 1 cup frozen peas and carrots, thawed
- 3 green onions, sliced
- 2 large eggs, lightly beaten
- 3 tbsp low-sodium soy sauce
- 1 tbsp oyster sauce (optional)
- 1/2 tsp ground black pepper
- 1 tsp cornstarch for chicken coating
- 1 tbsp water for cornstarch slurry
Instructions
- Mix cornstarch with 1 tbsp water to create a slurry. Toss chicken pieces in the slurry and season with black pepper.
- Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Cook chicken until golden and fully cooked, about 5โ6 minutes. Remove and set aside.
- Add remaining oil to the skillet and sautรฉ minced garlic for 30 seconds until fragrant.
- Add peas and carrots, cook for 2โ3 minutes until tender.
- Push vegetables to the side, pour in beaten eggs, and scramble until just set.
- Add cooked rice and chicken back to the skillet. Pour soy sauce and oyster sauce (if using) over rice. Stir-fry for 3โ4 minutes until everything is well combined and heated through.
- Garnish with sliced green onions and serve immediately.
Notes
- Day-old rice works best to prevent mushy fried rice.
- Adjust vegetables according to preference.
- For extra flavor, add a dash of sesame oil at the end.
