Description

This High-Protein Cinnamon Roll Baked Oatmeal is a cozy, protein-packed breakfast that tastes like a sweet cinnamon treat. Perfect for mornings when you want a warm, hearty, and nutritious start to your day.


Ingredients

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup unsweetened almond milk (or milk of choice)
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1/2 cup vanilla protein powder
  • 2 tablespoons melted coconut oil or unsalted butter
  • 1/4 cup raisins (optional)
  • 1/4 cup chopped walnuts (optional)


Instructions

  1. Preheat oven to 350ยฐF (175ยฐC) and lightly grease a baking dish.
  2. In a large bowl, mix oats, baking powder, cinnamon, salt, and protein powder.
  3. In a separate bowl, whisk together almond milk, Greek yogurt, honey, vanilla extract, eggs, and melted coconut oil.
  4. Combine wet and dry ingredients until evenly mixed. Fold in raisins and walnuts if using.
  5. Pour mixture into prepared baking dish and smooth the top.
  6. Bake for 30โ€“35 minutes or until set and lightly golden.
  7. Allow to cool slightly before serving. Enjoy warm!
