Tender chicken breasts rolled with a flavorful herbed ricotta filling, baked in a savory marinara sauce. Perfect for a cozy dinner night.
Ingredients
For the Chicken:
- 4 pieces boneless, skinless chicken breasts (or turkey cutlets / portobello mushrooms)
For the Filling:
- 1 cup ricotta cheese (or blended cottage cheese / tofu for dairy-free)
- 1/4 cup grated Parmesan cheese (optional)
- 1 cup fresh spinach (or kale)
- 1/4 cup fresh basil
- 1/4 cup fresh parsley
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
For Cooking:
- 2 tablespoons olive oil
- 1 cup marinara sauce
- 1/2 teaspoon crushed red pepper flakes (optional)
Instructions
- Preheat oven to 375ยฐF (190ยฐC).
- Prepare filling: In a bowl, mix ricotta, Parmesan, spinach, basil, parsley, garlic powder, salt, and pepper until well combined.
- Flatten chicken breasts and spread filling evenly over each. Roll up and secure with toothpicks if needed.
- Heat olive oil in a skillet over medium heat. Sear chicken rolls for 2โ3 minutes per side until lightly browned.
- Place seared chicken rolls in a baking dish. Pour marinara sauce over them and sprinkle with red pepper flakes if using.
- Bake for 25โ30 minutes until chicken is cooked through.
- Remove toothpicks before serving. Garnish with extra fresh herbs if desired.
Notes
- Can substitute spinach with other greens or omit entirely.
- For dairy-free, use tofu-based ricotta alternative.
- Serve with pasta, rice, or a side salad for a complete meal.
