Ingredients

For the Chicken:

  • 4 pieces boneless, skinless chicken breasts (or turkey cutlets / portobello mushrooms)

For the Filling:

  • 1 cup ricotta cheese (or blended cottage cheese / tofu for dairy-free)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 cup fresh spinach (or kale)
  • 1/4 cup fresh basil
  • 1/4 cup fresh parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

For Cooking:

  • 2 tablespoons olive oil
  • 1 cup marinara sauce
  • 1/2 teaspoon crushed red pepper flakes (optional)


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC).
  2. Prepare filling: In a bowl, mix ricotta, Parmesan, spinach, basil, parsley, garlic powder, salt, and pepper until well combined.
  3. Flatten chicken breasts and spread filling evenly over each. Roll up and secure with toothpicks if needed.
  4. Heat olive oil in a skillet over medium heat. Sear chicken rolls for 2โ€“3 minutes per side until lightly browned.
  5. Place seared chicken rolls in a baking dish. Pour marinara sauce over them and sprinkle with red pepper flakes if using.
  6. Bake for 25โ€“30 minutes until chicken is cooked through.
  7. Remove toothpicks before serving. Garnish with extra fresh herbs if desired.
