Description
This Greek Yogurt Banana Bread is moist, flavorful, and healthier than traditional banana bread, using Greek yogurt and honey for natural sweetness.
Ingredients
- 3 ripe bananas, mashed
- 1/2 cup Greek yogurt
- 1/3 cup honey or maple syrup
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups whole wheat flour (or all-purpose flour)
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/3 cup walnuts or chocolate chips (optional)
Instructions
- Preheat oven to 350ยฐF (175ยฐC) and grease a 9×5-inch loaf pan.
- In a large bowl, mash the bananas. Mix in Greek yogurt, honey, eggs, and vanilla until smooth.
- In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
- Fold the dry ingredients into the wet ingredients until just combined. Stir in walnuts or chocolate chips if using.
- Pour batter into prepared pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- Use overripe bananas for the best sweetness and flavor.
- Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
