Description

These Garlic Parmesan Chicken Meatloaves are flavorful, tender, and packed with cheesy goodness. Perfect for a healthy family dinner or meal prep.


Ingredients

  • 450 g ground chicken
  • 60 g grated Parmesan cheese
  • 60 g breadcrumbs
  • 15 g fresh parsley, finely chopped
  • 3 garlic cloves, minced
  • 1 large egg, beaten
  • 1 teaspoon dried oregano
  • ยฝ teaspoon fine sea salt
  • ยผ teaspoon freshly ground black pepper
  • 60 ml whole milk
  • 2 tablespoons extra virgin olive oil
  • 25 g grated mozzarella cheese (optional)


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC) and lightly grease a baking dish or line with parchment paper.
  2. In a large bowl, combine ground chicken, Parmesan cheese, breadcrumbs, parsley, garlic, egg, oregano, salt, pepper, and milk. Mix until well combined.
  3. Shape mixture into individual mini meatloaves or one large loaf and place in prepared dish.
  4. Optionally, sprinkle mozzarella cheese on top.
  5. Drizzle olive oil over the meatloaves and bake for 25โ€“30 minutes, until internal temperature reaches 165ยฐF (74ยฐC) and tops are golden brown.
  6. Remove from oven and let rest for 5 minutes before serving.

Notes

  • Can be made ahead and stored in the refrigerator for 1โ€“2 days before baking.
  • Serve with mashed potatoes, roasted vegetables, or a fresh salad.
  • For extra flavor, add a dash of smoked paprika or chili flakes to the mixture.
