Description

These Garlic Parmesan Chicken Meatloaves are tender and flavorful, made with lean ground chicken and topped with a creamy garlic Parmesan sauce for a comforting, protein-packed dinner.


Ingredients

For the Meatloaves:

  • 1 lb ground chicken (90–93% lean)
  • 2 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 1/3 cup breadcrumbs
  • 1 egg
  • ¼ cup grated or finely chopped onion
  • 1 tablespoon fresh parsley (or 1 tsp dried)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning

For the Garlic Parmesan Sauce:

  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon flour
  • ¾ cup milk
  • ⅓ cup grated Parmesan cheese
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine all meatloaf ingredients and mix until just combined.
  3. Form mixture into individual mini meatloaves or one large loaf and place on the prepared baking sheet.
  4. Bake for 25–30 minutes, or until internal temperature reaches 165°F (74°C).
  5. While meatloaves bake, make the sauce: In a small saucepan, melt butter over medium heat, sauté garlic 1 minute, whisk in flour until smooth, then slowly add milk while stirring. Add Parmesan and season with salt and pepper. Cook until thickened.
  6. Pour sauce over baked meatloaves and serve warm.
