These Garlic Parmesan Chicken Meatloaves are tender and flavorful, made with lean ground chicken and topped with a creamy garlic Parmesan sauce for a comforting, protein-packed dinner.
Ingredients
For the Meatloaves:
- 1 lb ground chicken (90–93% lean)
- 2 cloves garlic, minced
- ½ cup grated Parmesan cheese
- 1/3 cup breadcrumbs
- 1 egg
- ¼ cup grated or finely chopped onion
- 1 tablespoon fresh parsley (or 1 tsp dried)
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
For the Garlic Parmesan Sauce:
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 tablespoon flour
- ¾ cup milk
- ⅓ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, combine all meatloaf ingredients and mix until just combined.
- Form mixture into individual mini meatloaves or one large loaf and place on the prepared baking sheet.
- Bake for 25–30 minutes, or until internal temperature reaches 165°F (74°C).
- While meatloaves bake, make the sauce: In a small saucepan, melt butter over medium heat, sauté garlic 1 minute, whisk in flour until smooth, then slowly add milk while stirring. Add Parmesan and season with salt and pepper. Cook until thickened.
- Pour sauce over baked meatloaves and serve warm.
