Ingredients
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 2 large yellow onions, thinly sliced
- 1 teaspoon sugar
- ยฝ teaspoon salt
- 3 garlic cloves, minced
- 1 ยฝ cups orzo pasta
- 2 cups cooked shredded chicken (rotisserie works well)
- ยฝ teaspoon dried thyme
- ยผ teaspoon black pepper
- 2 cups low-sodium chicken broth
- 1 cup heavy cream or half and half
- 1 ยฝ cups shredded mozzarella cheese
- ยฝ cup grated Parmesan cheese
- Optional: ยฝ teaspoon Worcestershire sauce or balsamic glaze
Instructions
- Preheat oven to 375ยฐF (190ยฐC).
- In a large skillet, heat butter and olive oil over medium heat. Add onions, sugar, and salt; cook until caramelized, about 15 minutes.
- Add garlic and cook 1 minute more.
- Stir in orzo, shredded chicken, thyme, and black pepper.
- Pour in chicken broth and cream; stir until combined. Cook 2โ3 minutes until slightly thickened.
- Transfer mixture to a greased baking dish. Top with mozzarella and Parmesan cheese.
- Bake 20โ25 minutes until cheese is melted and bubbly. Optionally, drizzle Worcestershire sauce or balsamic glaze over top before serving.

- Use rotisserie chicken for a faster version.
- Add mushrooms or spinach for extra vegetables.
