Description

Freezer Breakfast Burritos are a perfect make-ahead breakfast option. Crispy tater tots, savory sausage, scrambled eggs, and melted cheese wrapped in tortillas make them hearty, delicious, and ready to heat and eat on busy mornings.


Ingredients

  • 2 cups frozen tater tots
  • 2 tablespoons olive oil
  • 8 links breakfast sausage, casing removed
  • 8 large eggs, lightly beaten
  • ⅓ cup half and half
  • Kosher salt and freshly ground black pepper, to taste
  • 1 (16-ounce) can refried beans
  • 8 8-inch flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 Roma tomatoes, diced
  • ¼ cup chopped fresh cilantro leaves


Instructions

  1. Preheat oven to 400°F (200°C). Spread tater tots on a baking sheet and toss with olive oil, salt, and pepper. Bake for 20–25 minutes until crispy.
  2. While tater tots bake, cook breakfast sausage in a skillet over medium heat until browned and cooked through. Remove from skillet and chop into small pieces.
  3. In the same skillet, scramble eggs with half and half, salt, and pepper until just set.
  4. Warm refried beans in a small saucepan until smooth and spreadable.
  5. To assemble, lay out a tortilla, spread some refried beans, top with tater tots, sausage, scrambled eggs, cheddar, Monterey Jack, diced tomatoes, and cilantro.
  6. Roll up burrito, folding in sides, and wrap tightly. Repeat with remaining tortillas and ingredients.
  7. Optional: Wrap in foil and freeze for later. To reheat, bake at 350°F (175°C) for 20–25 minutes or microwave until warmed through.
