Description
Freezer Breakfast Burritos are a perfect make-ahead breakfast option. Crispy tater tots, savory sausage, scrambled eggs, and melted cheese wrapped in tortillas make them hearty, delicious, and ready to heat and eat on busy mornings.
Ingredients
- 2 cups frozen tater tots
- 2 tablespoons olive oil
- 8 links breakfast sausage, casing removed
- 8 large eggs, lightly beaten
- ⅓ cup half and half
- Kosher salt and freshly ground black pepper, to taste
- 1 (16-ounce) can refried beans
- 8 8-inch flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 2 Roma tomatoes, diced
- ¼ cup chopped fresh cilantro leaves
Instructions
- Preheat oven to 400°F (200°C). Spread tater tots on a baking sheet and toss with olive oil, salt, and pepper. Bake for 20–25 minutes until crispy.
- While tater tots bake, cook breakfast sausage in a skillet over medium heat until browned and cooked through. Remove from skillet and chop into small pieces.
- In the same skillet, scramble eggs with half and half, salt, and pepper until just set.
- Warm refried beans in a small saucepan until smooth and spreadable.
- To assemble, lay out a tortilla, spread some refried beans, top with tater tots, sausage, scrambled eggs, cheddar, Monterey Jack, diced tomatoes, and cilantro.
- Roll up burrito, folding in sides, and wrap tightly. Repeat with remaining tortillas and ingredients.
- Optional: Wrap in foil and freeze for later. To reheat, bake at 350°F (175°C) for 20–25 minutes or microwave until warmed through.
