Ingredients

  • 6 large eggs
  • 1 cup cottage cheese
  • 1 cup shredded cheese (cheddar, mozzarella, or Swiss)
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 cup chopped vegetables (bell peppers, spinach, mushrooms)
  • 1 cup cooked turkey bacon or chicken sausage (optional)


Instructions

  1. Preheat oven to 350ยฐF (175ยฐC) and grease a muffin tin or line with silicone cups.
  2. In a mixing bowl, whisk together eggs, cottage cheese, shredded cheese, milk, salt, pepper, garlic powder, and onion powder until smooth.
  3. Fold in chopped vegetables and cooked meat if using.
  4. Pour mixture evenly into prepared muffin cups, filling about 3/4 full.
  5. Bake for 20โ€“25 minutes or until egg bites are set and lightly golden on top.
  6. Allow to cool slightly before removing from the tin. Serve warm or store in the fridge for later.
