Ingredients
- 6 large eggs
- 1 cup cottage cheese
- 1 cup shredded cheese (cheddar, mozzarella, or Swiss)
- 1/4 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 cup chopped vegetables (bell peppers, spinach, mushrooms)
- 1 cup cooked turkey bacon or chicken sausage (optional)
Instructions
- Preheat oven to 350ยฐF (175ยฐC) and grease a muffin tin or line with silicone cups.
- In a mixing bowl, whisk together eggs, cottage cheese, shredded cheese, milk, salt, pepper, garlic powder, and onion powder until smooth.
- Fold in chopped vegetables and cooked meat if using.
- Pour mixture evenly into prepared muffin cups, filling about 3/4 full.
- Bake for 20โ25 minutes or until egg bites are set and lightly golden on top.
- Allow to cool slightly before removing from the tin. Serve warm or store in the fridge for later.

- Use any combination of vegetables or protein to suit your taste.
- For extra fluffiness, separate egg whites and fold them in at the end.
- These egg bites can be frozen for up to 1 month and reheated in the microwave.
