Description

Fall Apple Cider Stew Mash is a cozy, hearty dish perfect for autumn nights. Tender top sirloin is cooked with carrots and onions, then combined with creamy mashed potatoes enriched with apple cider, cheddar, and sour cream for a comforting and flavorful meal.


Ingredients

  • 340 g top sirloin, diced
  • 2 medium carrots, sliced
  • 3 tbsp chives, chopped
  • 1 large onion, diced
  • 6 large potatoes, peeled and diced
  • 1/2 cup beef broth
  • Salt and black pepper to taste
  • 1 tbsp olive oil
  • 2 cups apple cider
  • 2 tbsp butter
  • 1 cup sharp cheddar cheese, grated
  • 1/4 cup milk
  • 1/4 cup sour cream


Instructions

  1. Heat olive oil in a large skillet over medium heat. Sear diced top sirloin until browned. Remove and set aside.
  2. In the same skillet, sautรฉ onions and carrots until softened, about 5 minutes.
  3. Add apple cider and beef broth. Return the beef to the skillet and simmer until meat is cooked and vegetables are tender, about 15 minutes.
  4. Meanwhile, boil potatoes in salted water until tender, about 15 minutes. Drain and mash with butter, milk, cheddar cheese, and sour cream until creamy.
  5. Stir in chives and season with salt and pepper.
  6. Serve beef and vegetable stew over the mashed potatoes for a hearty meal.

Notes

  • Use Yukon gold potatoes for extra creamy mash.
  • Add a pinch of cinnamon or nutmeg to the mash for a fall flavor twist.
