This Easy Zucchini Mushroom Chicken Stir Fry is a quick, healthy, and flavorful meal featuring tender chicken, crisp zucchini, and savory mushrooms tossed in a savory soy-ginger sauce.


Ingredients

  • 2 medium zucchinis, sliced into half-moons
  • 8 oz mushrooms, sliced (cremini or button)
  • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp vegetable or canola oil
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, minced
  • 2-3 green onions, sliced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tsp sesame oil
  • 1 tsp cornstarch mixed with 2 tbsp water (slurry)
  • Salt and black pepper, to taste
  • Sesame seeds, for garnish


Instructions

  1. Heat oil in a large skillet or wok over medium-high heat.
  2. Add chicken pieces and cook until browned and cooked through, about 5โ€“7 minutes.
  3. Add garlic and ginger, sautรฉ for 30 seconds until fragrant.
  4. Add sliced zucchini and mushrooms, stir-fry for 3โ€“4 minutes until vegetables are crisp-tender.
  5. Stir in soy sauce, oyster sauce (if using), and sesame oil.
  6. Add cornstarch slurry to thicken the sauce and stir until evenly coated.
  7. Season with salt and pepper to taste.
  8. Garnish with sliced green onions and sesame seeds before serving.
