This Easy Zucchini Mushroom Chicken Stir Fry is a quick, healthy, and flavorful meal featuring tender chicken, crisp zucchini, and savory mushrooms tossed in a savory soy-ginger sauce.
Ingredients
- 2 medium zucchinis, sliced into half-moons
- 8 oz mushrooms, sliced (cremini or button)
- 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
- 2 tbsp vegetable or canola oil
- 3 cloves garlic, minced
- 1 tsp fresh ginger, minced
- 2-3 green onions, sliced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce (optional)
- 1 tsp sesame oil
- 1 tsp cornstarch mixed with 2 tbsp water (slurry)
- Salt and black pepper, to taste
- Sesame seeds, for garnish
Instructions
- Heat oil in a large skillet or wok over medium-high heat.
- Add chicken pieces and cook until browned and cooked through, about 5โ7 minutes.
- Add garlic and ginger, sautรฉ for 30 seconds until fragrant.
- Add sliced zucchini and mushrooms, stir-fry for 3โ4 minutes until vegetables are crisp-tender.
- Stir in soy sauce, oyster sauce (if using), and sesame oil.
- Add cornstarch slurry to thicken the sauce and stir until evenly coated.
- Season with salt and pepper to taste.
- Garnish with sliced green onions and sesame seeds before serving.
Notes
- Serve over steamed rice or noodles for a complete meal.
- Adjust vegetables according to season or preference.
- For extra heat, add red pepper flakes or a dash of sriracha.
