Ingredients

  • 1 can canned chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1 red bell pepper, diced
  • 1 zucchini, sliced
  • 2 cups fresh spinach
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon turmeric
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lemon juice


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add garlic and ginger, sautรฉ for 1โ€“2 minutes until fragrant.
  3. Add chickpeas and cook for 5 minutes, stirring occasionally.
  4. Add red bell pepper and zucchini. Cook for another 5โ€“7 minutes until veggies are tender.
  5. Stir in ground cumin, smoked paprika, cayenne, and turmeric. Cook for 1โ€“2 minutes until spices are fragrant.
  6. Add spinach, stirring until wilted.
  7. Finish with fresh cilantro and lemon juice. Serve hot.
