This Easy Slow Cooker French Toast Casserole is a rich, indulgent breakfast perfect for weekends or holiday mornings. Made with brioche bread, eggs, milk, warm spices, and topped with a buttery brown sugar topping, it’s set-it-and-forget-it deliciousness.
Ingredients
- 24 ounces stale brioche bread (about 1ยฝ loaves, or use French, Challah, or Texas toast)
- 1/2 cup pecans, chopped, optional
- 8 large eggs
- 3 cups whole milk
- 1/4 cup real maple syrup
- 1 tablespoon pure vanilla extract
- 1 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- Topping:
- 1/2 cup butter, sliced
- 1/2 cup packed brown sugar (light or dark)
- 1 teaspoon ground cinnamon
Instructions
- Grease the slow cooker with non-stick spray or butter.
- Cut brioche bread into cubes and place them evenly in the slow cooker. Sprinkle chopped pecans on top if using.
- In a large bowl, whisk together eggs, milk, maple syrup, vanilla, salt, cinnamon, and nutmeg until combined.
- Pour the egg mixture over the bread cubes, pressing lightly to ensure bread absorbs liquid.
- In a small bowl, combine butter slices, brown sugar, and cinnamon for the topping. Dot over the top of the casserole.
- Cover and cook on low for 4โ5 hours or until the casserole is set and golden on top.
- Serve warm with extra maple syrup if desired.
Notes
- For a slightly crispy top, uncover the last 30 minutes of cooking.
- This casserole can be prepared the night before; just refrigerate overnight and cook in the morning.
