Description

This Easy Slow Cooker French Toast Casserole is a rich, indulgent breakfast perfect for weekends or holiday mornings. Made with brioche bread, eggs, milk, warm spices, and topped with a buttery brown sugar topping, it’s set-it-and-forget-it deliciousness.

Ingredients

  • 24 ounces stale brioche bread (about 1ยฝ loaves, or use French, Challah, or Texas toast)
  • 1/2 cup pecans, chopped, optional
  • 8 large eggs
  • 3 cups whole milk
  • 1/4 cup real maple syrup
  • 1 tablespoon pure vanilla extract
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Topping:
  • 1/2 cup butter, sliced
  • 1/2 cup packed brown sugar (light or dark)
  • 1 teaspoon ground cinnamon

Instructions

  1. Grease the slow cooker with non-stick spray or butter.
  2. Cut brioche bread into cubes and place them evenly in the slow cooker. Sprinkle chopped pecans on top if using.
  3. In a large bowl, whisk together eggs, milk, maple syrup, vanilla, salt, cinnamon, and nutmeg until combined.
  4. Pour the egg mixture over the bread cubes, pressing lightly to ensure bread absorbs liquid.
  5. In a small bowl, combine butter slices, brown sugar, and cinnamon for the topping. Dot over the top of the casserole.
  6. Cover and cook on low for 4โ€“5 hours or until the casserole is set and golden on top.
  7. Serve warm with extra maple syrup if desired.
