This Easy Ground Turkey Zucchini Casserole is a hearty and healthy dinner option. Ground turkey, fresh zucchini, and tomatoes are baked together with Italian herbs and topped with melted mozzarella for a satisfying meal.
Ingredients
- 1 lb ground turkey
- 2 cloves garlic, minced
- 1 tsp dried Italian herbs
- 1/2 cup onion, diced
- 1 can tomatoes (14 oz), drained
- 2 medium zucchinis, sliced
- 1/4 tsp black pepper
- 1/2 tsp salt
- 1 tbsp olive oil
- 1 cup mozzarella cheese, shredded
Instructions
- Preheat oven to 375ยฐF (190ยฐC). Grease a 9×9-inch casserole dish.
- In a skillet, heat olive oil over medium heat. Add ground turkey, garlic, and onion. Cook until turkey is browned and onions are softened.
- Add tomatoes, Italian herbs, salt, and pepper. Stir to combine and cook 3โ4 minutes.
- Layer sliced zucchini in the casserole dish. Pour the turkey mixture over the zucchini evenly.
- Sprinkle mozzarella cheese on top.
- Bake for 25โ30 minutes until cheese is melted and bubbly, and zucchini is tender.
- Let cool for 5 minutes before serving. Enjoy warm!
