Ingredients

  • 1 lb ground turkey
  • 2 cloves garlic, minced
  • 1 tsp dried Italian herbs
  • 1/2 cup onion, diced
  • 1 can tomatoes (14 oz), drained
  • 2 medium zucchinis, sliced
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1 tbsp olive oil
  • 1 cup mozzarella cheese, shredded


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC). Grease a 9×9-inch casserole dish.
  2. In a skillet, heat olive oil over medium heat. Add ground turkey, garlic, and onion. Cook until turkey is browned and onions are softened.
  3. Add tomatoes, Italian herbs, salt, and pepper. Stir to combine and cook 3โ€“4 minutes.
  4. Layer sliced zucchini in the casserole dish. Pour the turkey mixture over the zucchini evenly.
  5. Sprinkle mozzarella cheese on top.
  6. Bake for 25โ€“30 minutes until cheese is melted and bubbly, and zucchini is tender.
