Easy Cucumber Salad Sandwiches are a light and refreshing snack or lunch option. Crisp cucumbers, creamy Greek yogurt, feta, and fresh herbs make a flavorful filling, perfect for whole-grain bread and fresh sprouts.
Ingredients
- 1/8 tsp black pepper
- 2 tbsp low-fat Greek yogurt
- 1 cup diced English cucumber
- 1 tbsp chopped herbs (fresh dill and chives)
- 1/8 tsp salt
- 2 tbsp crumbled feta cheese
- 1/2 tsp fresh lemon juice
- 1/4 tsp grated lemon peel
- For assembly: 4 slices whole-grain bread, 2 thin slices red onion, 1/2 cup alfalfa sprouts
Instructions
- In a small bowl, combine Greek yogurt, cucumber, herbs, black pepper, salt, feta, lemon juice, and lemon peel. Mix until well combined.
- Toast the whole-grain bread slices lightly if desired.
- Spread cucumber mixture evenly over 2 slices of bread.
- Top with red onion slices and alfalfa sprouts.
- Cover with remaining bread slices and cut sandwiches in half. Serve immediately.
Notes
- For extra flavor, add a few slices of ripe tomato.
- These sandwiches are best served fresh to keep the bread from getting soggy.
- Use fresh herbs for the brightest flavor, or substitute with 1 tsp dried dill if needed.
