Ingredients

  • 2 lbs lean ground beef
  • 14 oz canned corn, drained
  • 14.5 oz canned kidney beans, drained
  • 2 cups salsa
  • 1 oz taco seasoning
  • 1 cup water
  • 1 tsp salt
  • ยฝ tsp black pepper
  • ยฝ tsp garlic powder
  • 1 ยฝ cups shredded cheese
  • 8.5 oz Jiffy corn muffin mix
  • 8.25 oz creamed corn
  • 2 tbsp milk
  • ยผ cup sour cream


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC).
  2. In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  3. Stir in taco seasoning, water, salsa, corn, kidney beans, salt, pepper, and garlic powder. Simmer for 5โ€“7 minutes.
  4. Spread beef mixture evenly in a greased baking dish.
  5. In a bowl, mix corn muffin mix, creamed corn, milk, and sour cream until combined.
  6. Spread cornbread mixture over the beef layer.
  7. Sprinkle shredded cheese on top.
  8. Bake for 25โ€“30 minutes, until cornbread is golden and cooked through.
  9. Let rest for 10 minutes before serving.

Notes

  • Add jalapeรฑos for a spicy version.
  • Use black beans instead of kidney beans if preferred.
