Ingredients
- 2 lbs lean ground beef
- 14 oz canned corn, drained
- 14.5 oz canned kidney beans, drained
- 2 cups salsa
- 1 oz taco seasoning
- 1 cup water
- 1 tsp salt
- ยฝ tsp black pepper
- ยฝ tsp garlic powder
- 1 ยฝ cups shredded cheese
- 8.5 oz Jiffy corn muffin mix
- 8.25 oz creamed corn
- 2 tbsp milk
- ยผ cup sour cream
Instructions
- Preheat oven to 375ยฐF (190ยฐC).
- In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
- Stir in taco seasoning, water, salsa, corn, kidney beans, salt, pepper, and garlic powder. Simmer for 5โ7 minutes.
- Spread beef mixture evenly in a greased baking dish.
- In a bowl, mix corn muffin mix, creamed corn, milk, and sour cream until combined.
- Spread cornbread mixture over the beef layer.
- Sprinkle shredded cheese on top.
- Bake for 25โ30 minutes, until cornbread is golden and cooked through.
- Let rest for 10 minutes before serving.
Notes
- Add jalapeรฑos for a spicy version.
- Use black beans instead of kidney beans if preferred.
- Leftovers can be stored in the refrigerator for up to 3 days.
