Description
Dill Pickle Parmesan Chicken combines the tangy flavor of dill pickle ranch with a crispy Parmesan coating for a fun, flavorful twist on baked chicken that’s perfect for weeknight dinners.
Ingredients
- 3 boneless, skinless chicken breasts (about 1 ½ pounds), sliced in half horizontally
- 1 tsp kosher salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp paprika
- ½ cup dill pickle ranch dressing, plus more for serving
- 1 cup grated Parmesan cheese, divided
- 3 Tbsp plain breadcrumbs
- Fresh dill, chopped for garnish
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Season chicken with salt, pepper, garlic powder, onion powder, and paprika.
- Spread a thin layer of dill pickle ranch dressing on each chicken piece.
- In a bowl, mix ¾ cup Parmesan with breadcrumbs. Coat each chicken piece evenly in the mixture.
- Place chicken on prepared baking sheet and bake for 20–25 minutes, until chicken is cooked through (165°F / 74°C) and coating is golden.
- Sprinkle with remaining Parmesan and fresh dill before serving. Serve extra dill pickle ranch on the side if desired.
Notes
- Use panko breadcrumbs for an extra crispy texture.
- Can substitute Greek yogurt-based ranch for a lighter option.
- Best served immediately, but leftovers keep well in the fridge for 1–2 days.
