Ingredients
- 2 large boneless skinless chicken breasts
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 eggs, large
- 1 cup dill pickle juice
- 1/2 cup all-purpose flour
- 1 tsp paprika
- Salt and pepper, to taste
- 1 cup panko breadcrumbs
- 1/2 cup Parmesan cheese, grated
Instructions
- Preheat oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.
- Flatten chicken breasts slightly for even cooking.
- Set up three bowls: one with flour, paprika, salt, and pepper; one with beaten eggs mixed with dill pickle juice; and one with panko breadcrumbs and Parmesan cheese.
- Dredge each chicken breast in flour mixture, then egg mixture, then breadcrumb-Parmesan mixture, pressing gently to adhere.
- Place chicken on prepared baking sheet and bake for 20โ25 minutes until golden brown and cooked through.
- Optional: garnish with fresh dill before serving.
