Ingredients
- 2 tablespoons butter, unsalted
- 4 oz cream cheese
- 1/4 cup heavy whipping cream
- 1 cup shredded cheddar cheese
- 1 pound ground beef
- 2 tablespoons taco seasoning
- 4 low-carb tortillas
- 1 cup sour cream
- 1 cup shredded lettuce
- 1 medium tomato, diced
- 1 cup extra cheddar cheese
- 1/4 cup cilantro, chopped
- 1/2 cup jalapeรฑo slices (optional)
- 1 tablespoon olive oil
Instructions
- In a saucepan, melt butter over medium heat. Add cream cheese and heavy cream, stirring until smooth. Mix in shredded cheddar to make the cheese sauce.
- In a skillet, heat olive oil and cook ground beef until browned. Add taco seasoning and mix well.
- Lay a low-carb tortilla flat. Spread cheese sauce in the center, add cooked beef, lettuce, tomato, extra cheese, cilantro, and jalapeรฑo slices.
- Fold tortilla edges to enclose filling and lightly press to seal.
- Cook in a lightly greased skillet or panini press for 2โ3 minutes per side until golden and crispy.
- Serve immediately with sour cream on the side.
