Ingredients

  • 2 tablespoons butter, unsalted
  • 4 oz cream cheese
  • 1/4 cup heavy whipping cream
  • 1 cup shredded cheddar cheese
  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 4 low-carb tortillas
  • 1 cup sour cream
  • 1 cup shredded lettuce
  • 1 medium tomato, diced
  • 1 cup extra cheddar cheese
  • 1/4 cup cilantro, chopped
  • 1/2 cup jalapeรฑo slices (optional)
  • 1 tablespoon olive oil


Instructions

  1. In a saucepan, melt butter over medium heat. Add cream cheese and heavy cream, stirring until smooth. Mix in shredded cheddar to make the cheese sauce.
  2. In a skillet, heat olive oil and cook ground beef until browned. Add taco seasoning and mix well.
  3. Lay a low-carb tortilla flat. Spread cheese sauce in the center, add cooked beef, lettuce, tomato, extra cheese, cilantro, and jalapeรฑo slices.
  4. Fold tortilla edges to enclose filling and lightly press to seal.
  5. Cook in a lightly greased skillet or panini press for 2โ€“3 minutes per side until golden and crispy.
  6. Serve immediately with sour cream on the side.
