Description
Crockpot Chili Mac and Cheese is a hearty and cheesy one-pot meal with tender ground beef, kidney beans, tomatoes, and macaroni, perfect for cozy weeknight dinners.
Ingredients
- 1 lb ground beef
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (28 oz) diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups uncooked elbow macaroni
- 2 cups shredded cheddar cheese
- 2 tsp chili powder
- Salt and pepper, to taste
Instructions
- In a skillet, brown ground beef with chopped onion and garlic until fully cooked. Drain excess fat.
- Transfer beef mixture to the crockpot. Add kidney beans, diced tomatoes, uncooked macaroni, chili powder, salt, and pepper. Stir to combine.
- Cover and cook on LOW for 3โ4 hours or HIGH for 1.5โ2 hours, until macaroni is tender.
- Stir in shredded cheddar cheese until melted and creamy. Serve hot.
Notes
- For extra flavor, add a pinch of smoked paprika or cumin.
- Top with chopped green onions or fresh parsley before serving.
- Leftovers can be refrigerated for up to 3 days and reheated easily.
