Description

Crockpot Chili Mac and Cheese is a hearty and cheesy one-pot meal with tender ground beef, kidney beans, tomatoes, and macaroni, perfect for cozy weeknight dinners.


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (28 oz) diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups uncooked elbow macaroni
  • 2 cups shredded cheddar cheese
  • 2 tsp chili powder
  • Salt and pepper, to taste


Instructions

  1. In a skillet, brown ground beef with chopped onion and garlic until fully cooked. Drain excess fat.
  2. Transfer beef mixture to the crockpot. Add kidney beans, diced tomatoes, uncooked macaroni, chili powder, salt, and pepper. Stir to combine.
  3. Cover and cook on LOW for 3โ€“4 hours or HIGH for 1.5โ€“2 hours, until macaroni is tender.
  4. Stir in shredded cheddar cheese until melted and creamy. Serve hot.

Notes

  • For extra flavor, add a pinch of smoked paprika or cumin.
  • Top with chopped green onions or fresh parsley before serving.
