CrockPot Chicken Tortellini is a creamy, hearty slow-cooker pasta dish with tender chicken, cheese tortellini, and a rich blend of marinara, cream, and spinachโperfect for easy weeknight dinners.
Ingredients
- Olive oil spray
- 1 1/2 lbs chicken breast (about 4 medium breasts)
- 2 cups marinara sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion granules
- 1 teaspoon Italian seasoning mix
- 1/2 teaspoon paprika
- 1/4 teaspoon red chili flakes
- 1 1/2 cups chicken broth
- 1 lb cheese tortellini
- 1 cup mozzarella cheese, shredded
- 1/2 cup heavy cream
- 2 cups baby spinach
- 1/3 cup Parmesan cheese, grated
Instructions
- Spray the crockpot with olive oil spray.
- Place chicken breasts in the crockpot and pour marinara sauce over them.
- Add garlic powder, onion granules, Italian seasoning, paprika, and red chili flakes. Pour in chicken broth.
- Cover and cook on low for 4-5 hours or high for 2-3 hours until chicken is cooked through.
- Shred the chicken in the crockpot and stir in cheese tortellini, mozzarella, and heavy cream.
- Cook for an additional 20-30 minutes on low until tortellini is tender.
- Stir in baby spinach until wilted. Sprinkle with Parmesan cheese and serve hot.
Notes
- Use frozen tortellini if desired; adjust cook time slightly.
- For extra flavor, add a pinch of crushed red pepper or fresh basil.
- Leftovers store well in the refrigerator for up to 3 days.
