Crockpot Cheesy Chicken Broccoli Soup is a comforting, creamy soup perfect for chilly days. Tender chicken and broccoli are cooked in a cheesy, flavorful broth, ideal for a hands-off meal.
Ingredients
- 1 pound boneless, skinless chicken breasts or thighs
- 4 cups fresh broccoli florets (or frozen)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 3 cups chicken broth
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese or half-and-half
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika (optional)
- 1/4 teaspoon dried thyme (optional)
- 2 tablespoons all-purpose flour (optional, for thickening)
- Fresh parsley or extra cheese for garnish
Instructions
- Add chicken, broccoli, onion, garlic, carrots, and chicken broth to the crockpot.
- Season with salt, pepper, paprika, and thyme if using.
- Cook on low for 4โ6 hours or high for 2โ3 hours until chicken is cooked through and vegetables are tender.
- Remove chicken and shred it with two forks, then return to crockpot.
- Stir in shredded cheddar cheese and cream cheese (or half-and-half) until melted and creamy.
- If a thicker soup is desired, mix flour with a small amount of water and stir into the soup. Cook another 10โ15 minutes.
- Garnish with fresh parsley or extra cheese before serving.
