Description

Crockpot Cheesy Chicken Broccoli Soup is a comforting, creamy soup perfect for chilly days. Tender chicken and broccoli are cooked in a cheesy, flavorful broth, ideal for a hands-off meal.


Ingredients

  • 1 pound boneless, skinless chicken breasts or thighs
  • 4 cups fresh broccoli florets (or frozen)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 3 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese or half-and-half
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)
  • 1/4 teaspoon dried thyme (optional)
  • 2 tablespoons all-purpose flour (optional, for thickening)
  • Fresh parsley or extra cheese for garnish


Instructions

  1. Add chicken, broccoli, onion, garlic, carrots, and chicken broth to the crockpot.
  2. Season with salt, pepper, paprika, and thyme if using.
  3. Cook on low for 4โ€“6 hours or high for 2โ€“3 hours until chicken is cooked through and vegetables are tender.
  4. Remove chicken and shred it with two forks, then return to crockpot.
  5. Stir in shredded cheddar cheese and cream cheese (or half-and-half) until melted and creamy.
  6. If a thicker soup is desired, mix flour with a small amount of water and stir into the soup. Cook another 10โ€“15 minutes.
  7. Garnish with fresh parsley or extra cheese before serving.
