Crock Pot Creamy Chicken Parmesan Soup is a rich and comforting soup made with tender chicken, tomatoes, Parmesan cheese, and Italian seasonings. Perfect for cozy dinners with minimal effort.
Ingredients
- 2–3 boneless, skinless chicken breasts (or thighs)
- 4 cups low-sodium chicken broth
- 1 small yellow onion, finely chopped
- 3–4 garlic cloves, minced
- 1 tsp Italian seasoning
- 1/2 tsp crushed red pepper flakes (optional)
- 1 (14.5 oz) can crushed tomatoes
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 tbsp cornstarch + 2 tbsp cold water (optional, for thickening)
- Fresh parsley, chopped (for garnish)
- Salt and pepper to taste
Instructions
- Place chicken, chicken broth, onion, garlic, Italian seasoning, crushed red pepper flakes, and crushed tomatoes into a crock pot.
- Cook on low for 6–7 hours or on high for 3–4 hours until chicken is fully cooked.
- Remove chicken, shred it, and return to the crock pot.
- Stir in heavy cream and Parmesan cheese until creamy.
- If thicker soup is desired, mix cornstarch and cold water, then stir into soup and cook for an additional 10–15 minutes.
- Season with salt and pepper to taste and garnish with chopped parsley before serving.

- Use boneless, skinless chicken for easy shredding.
- Adjust red pepper flakes to your preferred spice level.
