Description

Crock Pot Creamy Chicken Parmesan Soup is a rich and comforting soup made with tender chicken, tomatoes, Parmesan cheese, and Italian seasonings. Perfect for cozy dinners with minimal effort.


Ingredients

  • 23 boneless, skinless chicken breasts (or thighs)
  • 4 cups low-sodium chicken broth
  • 1 small yellow onion, finely chopped
  • 34 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 (14.5 oz) can crushed tomatoes
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp cornstarch + 2 tbsp cold water (optional, for thickening)
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper to taste


Instructions

  1. Place chicken, chicken broth, onion, garlic, Italian seasoning, crushed red pepper flakes, and crushed tomatoes into a crock pot.
  2. Cook on low for 6–7 hours or on high for 3–4 hours until chicken is fully cooked.
  3. Remove chicken, shred it, and return to the crock pot.
  4. Stir in heavy cream and Parmesan cheese until creamy.
  5. If thicker soup is desired, mix cornstarch and cold water, then stir into soup and cook for an additional 10–15 minutes.
  6. Season with salt and pepper to taste and garnish with chopped parsley before serving.
