Ingredients

    4 cups frozen shredded hash browns, thawed
    3 tablespoons vegetable oil

    ¼ teaspoon black pepper
  • Egg and Sausage Component:
    6 large eggs
    ¼ cup whole milk
    ½ teaspoon salt
    ¼ teaspoon black pepper
    7 ounces breakfast sausage, casings removed
  • Garnishes and Toppings:
    1 cup shredded cheddar cheese
    ½ cup salsa (mild or spicy)
    1 avocado, diced
    2 green onions, sliced

Instructions

  1. Heat vegetable oil in a large skillet over medium heat. Add thawed hash browns, season with salt and black pepper, and cook until golden and crispy, about 10–12 minutes.
  2. In a separate bowl, whisk eggs with milk, salt, and black pepper.
  3. Cook breakfast sausage in another skillet until browned, breaking it into small pieces.
  4. Pour egg mixture into the skillet with the cooked sausage and scramble until just set.
  5. To assemble, divide crispy hash browns into bowls, top with scrambled eggs and sausage mixture.
  6. Sprinkle with shredded cheddar cheese, salsa, diced avocado, green onions, and optional cilantro.
