Ingredients
- 4 cod fillets (6 oz each)
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
Instructions
- Preheat air fryer to 400ยฐF (200ยฐC).
- In a shallow dish, combine panko breadcrumbs, Parmesan, garlic powder, onion powder, oregano, paprika, salt, and pepper.
- In another small bowl, mix mayonnaise, Dijon mustard, and lemon juice.
- Coat each cod fillet lightly with the mayo mixture, then dredge in the breadcrumb mixture, pressing gently to adhere.
- Place fillets in the air fryer basket in a single layer. Cook for 10โ12 minutes or until the fish is cooked through and crust is golden.
- Garnish with chopped parsley and serve immediately.
