Ingredients

  • 2 tablespoons olive oil

  • ยฝ teaspoon black pepper
  • 6 cups chicken broth
  • 2 cups cooked, shredded chicken
  • 8 lasagna noodles, broken into bite-sized pieces
  • 1 cup heavy cream or half-and-half
  • 1 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach (optional)
  • 1 cup ricotta cheese (for topping)
  • 1 cup shredded mozzarella cheese (for topping)
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sautรฉ 3โ€“4 minutes until fragrant and softened.
  2. Stir in Italian seasoning, red pepper flakes, salt, and black pepper.
  3. Add chicken broth and shredded chicken. Bring to a simmer.
  4. Add broken lasagna noodles and cook until tender, about 8โ€“10 minutes.
  5. Stir in heavy cream and Parmesan cheese. Cook 2โ€“3 minutes until creamy.
  6. Add spinach and cook until wilted, about 2 minutes.
