Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 4 garlic cloves, minced
- 1 teaspoon Italian seasoning
- ยฝ teaspoon crushed red pepper flakes (optional)
- 1 teaspoon salt
- ยฝ teaspoon black pepper
- 6 cups chicken broth
- 2 cups cooked, shredded chicken
- 8 lasagna noodles, broken into bite-sized pieces
- 1 cup heavy cream or half-and-half
- 1 cup freshly grated Parmesan cheese
- 2 cups fresh spinach (optional)
- 1 cup ricotta cheese (for topping)
- 1 cup shredded mozzarella cheese (for topping)
- 2 tablespoons fresh parsley, chopped
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and garlic, sautรฉ 3โ4 minutes until fragrant and softened.
- Stir in Italian seasoning, red pepper flakes, salt, and black pepper.
- Add chicken broth and shredded chicken. Bring to a simmer.
- Add broken lasagna noodles and cook until tender, about 8โ10 minutes.
- Stir in heavy cream and Parmesan cheese. Cook 2โ3 minutes until creamy.
- Add spinach and cook until wilted, about 2 minutes.
- Serve hot topped with ricotta cheese, shredded mozzarella, and chopped parsley.
