This Creamy Rotel Pasta with Ground Beef is a rich, cheesy, and slightly spicy comfort food dinner made with tender pasta, seasoned beef, Rotel tomatoes, and a creamy cheddar sauce. Perfect for busy weeknights and family meals.
Ingredients
- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (10 oz) Rotel tomatoes with green chilies, undrained
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 12 oz pasta (penne or rotini recommended)
- Salt and pepper to taste
- 1 tbsp olive oil
- 2 green onions, chopped (optional, for garnish)
Instructions
- Cook pasta according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Drain excess fat.
- Add diced onion and cook for 3โ4 minutes until softened. Stir in minced garlic and cook for 30 seconds.
- Stir in Rotel tomatoes, cream of mushroom soup, and heavy cream. Mix well.
- Bring to a gentle simmer, then add shredded cheddar cheese. Stir until melted and smooth.
- Add cooked pasta and toss to coat evenly.
- Season with salt and pepper to taste. Garnish with green onions if desired and serve warm.
Notes
- Use mild Rotel for less spice or hot Rotel for extra heat.
- Swap ground beef with ground turkey if preferred.
- Add extra cheese on top and broil for 2โ3 minutes for a baked version.
