Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) Rotel tomatoes with green chilies, undrained
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 12 oz pasta (penne or rotini recommended)
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 2 green onions, chopped (optional, for garnish)


Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Drain excess fat.
  3. Add diced onion and cook for 3โ€“4 minutes until softened. Stir in minced garlic and cook for 30 seconds.
  4. Stir in Rotel tomatoes, cream of mushroom soup, and heavy cream. Mix well.
  5. Bring to a gentle simmer, then add shredded cheddar cheese. Stir until melted and smooth.
  6. Add cooked pasta and toss to coat evenly.
  7. Season with salt and pepper to taste. Garnish with green onions if desired and serve warm.

  • Use mild Rotel for less spice or hot Rotel for extra heat.
  • Swap ground beef with ground turkey if preferred.
