Ingredients

  • 2 tbsp butter
  • 2 lbs chicken, cut into thin strips
  • 1 tsp sea salt
  • 1 tsp ground pepper
  • 1 white onion, diced
  • 2 tbsp garlic, diced
  • ยฝ cup chicken stock
  • ยฝ cup roasted red pepper, drained and sliced
  • 1 cup heavy cream
  • ยฝ cup Parmesan cheese, shredded
  • 1 tbsp Italian seasoning
  • ยฝ cup pepperoncini peppers, drained (sliced, rings, or whole)


Instructions

  1. In a large skillet, melt butter over medium heat. Add chicken strips, salt, and pepper; cook until lightly browned.
  2. Add diced onion and garlic; sautรฉ until onion is translucent.
  3. Pour in chicken stock and bring to a simmer.
  4. Add roasted red peppers, heavy cream, Parmesan cheese, and Italian seasoning; stir until combined.
  5. Stir in pepperoncini peppers and cook for 3โ€“5 minutes until sauce is slightly thickened and chicken is cooked through.
  6. Serve hot, optionally over pasta, rice, or with crusty bread.
