Ingredients
- 1 cup orzo pasta
- 2 cups vegetable or chicken broth
- 1 cup broccoli florets (fresh or frozen)
- 1 cup shredded cheddar cheese
- ยฝ cup heavy cream
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- ยฝ teaspoon garlic powder
- Salt and pepper to taste
- Optional: freshly ground black pepper and extra cheddar for garnish
Instructions
- Heat olive oil in a large skillet or saucepan over medium heat. Sautรฉ onion and garlic until soft and fragrant.
- Add orzo and garlic powder, stirring for 1โ2 minutes to lightly toast.
- Pour in broth and bring to a boil. Reduce heat to a simmer and cook for 8โ10 minutes, stirring occasionally.
- Add broccoli florets and continue to cook until orzo is tender and broccoli is bright green, about 3โ4 more minutes.
- Stir in heavy cream and shredded cheddar cheese until creamy and melted.
- Season with salt and pepper to taste. Garnish with extra cheddar and freshly ground black pepper if desired. Serve warm.
