Ingredients

  • 1 lb Italian sausage (mild or spicy, casings removed)
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2โ€“3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 (16 oz) package potato gnocchi
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 2 cups fresh spinach (optional)
  • ยผ cup grated Parmesan cheese (plus extra for garnish)


Instructions

  1. In a large pot, heat olive oil over medium heat. Add Italian sausage and cook until browned, breaking it apart with a spoon.
  2. Add diced onion, garlic, carrots, and celery. Sautรฉ for 3โ€“4 minutes until vegetables are softened.
  3. Stir in chicken broth and Italian seasoning. Bring to a boil, then reduce heat to a simmer for 10 minutes.
  4. Add gnocchi and cook according to package instructions, usually 2โ€“3 minutes until they float to the top.
  5. Stir in heavy cream and fresh spinach (if using) and simmer for an additional 2โ€“3 minutes.
  6. Season with salt and pepper to taste. Serve hot, garnished with grated Parmesan cheese.
