Ingredients
- 1 lb Italian sausage (mild or spicy, casings removed)
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2โ3 cloves garlic, minced
- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 (16 oz) package potato gnocchi
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 2 cups fresh spinach (optional)
- ยผ cup grated Parmesan cheese (plus extra for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add Italian sausage and cook until browned, breaking it apart with a spoon.
- Add diced onion, garlic, carrots, and celery. Sautรฉ for 3โ4 minutes until vegetables are softened.
- Stir in chicken broth and Italian seasoning. Bring to a boil, then reduce heat to a simmer for 10 minutes.
- Add gnocchi and cook according to package instructions, usually 2โ3 minutes until they float to the top.
- Stir in heavy cream and fresh spinach (if using) and simmer for an additional 2โ3 minutes.
- Season with salt and pepper to taste. Serve hot, garnished with grated Parmesan cheese.
Notes
- For a lighter version, substitute half-and-half or milk for heavy cream.
- Add red pepper flakes for a little heat if desired.
