Ingredients
- 2 large boneless, skinless chicken breasts
- 2 tablespoons olive oil, divided
- 3 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1โ2 teaspoon salt
- 1โ2 teaspoon black pepper
- 2 cups fresh spinach
- 8 ounces cream cheese, softened
- 1 cup shredded mozzarella cheese, divided
- 1/2 cup Parmesan cheese, optional
Instructions
- Preheat oven to 375ยฐF (190ยฐC).
- Heat 1 tablespoon olive oil in a skillet over medium heat. Cook chicken breasts until browned and cooked through, about 5โ7 minutes per side. Remove and slice.
- Add remaining olive oil to the pan, sautรฉ garlic for 1 minute, then stir in spinach until wilted.
- In a bowl, mix cream cheese, half of the mozzarella, Italian seasoning, salt, and pepper. Add cooked spinach and chicken slices, mixing gently.
- Transfer mixture to a baking dish. Top with remaining mozzarella and Parmesan if using.
- Bake for 20โ25 minutes until cheese is bubbly and golden. Serve warm.

- You can add mushrooms or sun-dried tomatoes for extra flavor.
- For a lighter version, use reduced-fat cream cheese and mozzarella.
