This Creamy Chicken and Spinach Casserole is a comforting, cheesy dish perfect for family dinners. Tender chicken breasts, fresh spinach, and a creamy cheese sauce combine for a rich and satisfying meal.


Ingredients

  • 2 large boneless, skinless chicken breasts
  • 2 tablespoons olive oil, divided
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1โ„2 teaspoon salt
  • 1โ„2 teaspoon black pepper
  • 2 cups fresh spinach
  • 8 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup Parmesan cheese, optional


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC).
  2. Heat 1 tablespoon olive oil in a skillet over medium heat. Cook chicken breasts until browned and cooked through, about 5โ€“7 minutes per side. Remove and slice.
  3. Add remaining olive oil to the pan, sautรฉ garlic for 1 minute, then stir in spinach until wilted.
  4. In a bowl, mix cream cheese, half of the mozzarella, Italian seasoning, salt, and pepper. Add cooked spinach and chicken slices, mixing gently.
  5. Transfer mixture to a baking dish. Top with remaining mozzarella and Parmesan if using.
  6. Bake for 20โ€“25 minutes until cheese is bubbly and golden. Serve warm.
