Ingredients

  • 4 boneless skinless chicken breasts or thighs
  • 1 cup fresh cranberries
  • 1 large orange, zested and juiced
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme or rosemary (or 1/2 teaspoon dried)
  • Salt and pepper to taste
  • 1/2 cup chicken broth or water
  • Optional: 1 tablespoon balsamic vinegar
  • Optional: 1 teaspoon Dijon mustard


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC) or prepare a skillet on medium heat.
  2. Season chicken with salt, pepper, and herbs.
  3. Heat olive oil in a skillet or oven-safe pan, sear chicken 2โ€“3 minutes per side until golden brown.
  4. Add cranberries, orange juice and zest, honey, garlic, and chicken broth.
  5. Optionally add balsamic vinegar and Dijon mustard for extra flavor.
  6. Cover and bake for 20โ€“25 minutes (or simmer on stove) until chicken is cooked through and cranberries soften.
  7. Serve warm, spooning sauce over the chicken.
