Ingredients
- 4 boneless skinless chicken breasts or thighs
- 1 cup fresh cranberries
- 1 large orange, zested and juiced
- 2 tablespoons honey or maple syrup
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme or rosemary (or 1/2 teaspoon dried)
- Salt and pepper to taste
- 1/2 cup chicken broth or water
- Optional: 1 tablespoon balsamic vinegar
- Optional: 1 teaspoon Dijon mustard
Instructions
- Preheat oven to 375ยฐF (190ยฐC) or prepare a skillet on medium heat.
- Season chicken with salt, pepper, and herbs.
- Heat olive oil in a skillet or oven-safe pan, sear chicken 2โ3 minutes per side until golden brown.
- Add cranberries, orange juice and zest, honey, garlic, and chicken broth.
- Optionally add balsamic vinegar and Dijon mustard for extra flavor.
- Cover and bake for 20โ25 minutes (or simmer on stove) until chicken is cooked through and cranberries soften.
- Serve warm, spooning sauce over the chicken.
Notes
- Fresh cranberries provide the best flavor, but frozen can be used if thawed.
