Ingredients
- 12 oz pasta (penne or fettuccine)
- 1 lb boneless skinless chicken breast, cut into bite-sized pieces
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 medium onion, diced
- 1 cup heavy cream (or coconut milk)
- 1 cup low-sodium chicken broth
- 1 cup grated parmesan cheese
- 1 tablespoon Italian seasoning
- 1 teaspoon red pepper flakes (adjust to taste)
- Salt and black pepper, to taste
- Fresh parsley for garnish (optional)
Instructions
- Cook pasta according to package directions. Drain and set aside.
- In a large skillet over medium heat, melt butter.
- Add chicken pieces, season with salt and pepper, and cook until golden and fully cooked. Remove and set aside.
- In the same skillet, add diced onion and cook for 3โ4 minutes until softened.
- Add minced garlic and cook for 30 seconds until fragrant.
- Pour in chicken broth and heavy cream. Stir well and bring to a gentle simmer.
- Add Italian seasoning and red pepper flakes.
- Stir in parmesan cheese until melted and sauce thickens.
- Return cooked chicken and pasta to the skillet. Toss until fully coated.
- Garnish with fresh parsley and serve warm.
