Description

Cottage Cheese Blueberry Cloud Bread is a fluffy, protein-packed delight. Light and airy, with bursts of fresh blueberries and a hint of sweetness from honey or maple syrup, itโ€™s perfect for breakfast or a snack.


Ingredients

  • 1/2 cup blueberries, fresh
  • 3 large eggs
  • 2 tbsp honey or maple syrup
  • 1/2 tsp baking powder
  • 1 tbsp cornstarch
  • Pinch of salt
  • 1 tsp vanilla extract
  • 1 cup cottage cheese, full-fat or low-fat creamy


Instructions

  1. Preheat oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
  2. In a large bowl, separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form.
  3. In another bowl, combine egg yolks, cottage cheese, honey or maple syrup, vanilla extract, baking powder, and cornstarch until smooth.
  4. Gently fold the egg whites into the cottage cheese mixture until just combined.
  5. Fold in the blueberries carefully.
  6. Spoon the batter onto the prepared baking sheet in rounds or loaf shape.
  7. Bake for 20โ€“25 minutes, or until lightly golden and set.
  8. Allow to cool slightly before serving.

Notes

  • Use fresh or frozen blueberries; if frozen, thaw and drain excess liquid.
  • Store in an airtight container in the fridge for up to 3 days.
  • Optional: sprinkle with powdered sugar or cinnamon before serving.
