Description
Cottage Cheese Blueberry Cloud Bread is a fluffy, protein-packed delight. Light and airy, with bursts of fresh blueberries and a hint of sweetness from honey or maple syrup, itโs perfect for breakfast or a snack.
Ingredients
- 1/2 cup blueberries, fresh
- 3 large eggs
- 2 tbsp honey or maple syrup
- 1/2 tsp baking powder
- 1 tbsp cornstarch
- Pinch of salt
- 1 tsp vanilla extract
- 1 cup cottage cheese, full-fat or low-fat creamy
Instructions
- Preheat oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
- In a large bowl, separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form.
- In another bowl, combine egg yolks, cottage cheese, honey or maple syrup, vanilla extract, baking powder, and cornstarch until smooth.
- Gently fold the egg whites into the cottage cheese mixture until just combined.
- Fold in the blueberries carefully.
- Spoon the batter onto the prepared baking sheet in rounds or loaf shape.
- Bake for 20โ25 minutes, or until lightly golden and set.
- Allow to cool slightly before serving.
Notes
- Use fresh or frozen blueberries; if frozen, thaw and drain excess liquid.
- Store in an airtight container in the fridge for up to 3 days.
- Optional: sprinkle with powdered sugar or cinnamon before serving.
