Description

Delicious Cookie Butter Oatmeal Bars with a rich caramel filling. Chewy, sweet, and perfect for dessert or a snack.


Ingredients

  • โ…“ cup + 1 tbsp butter, melted (90g)
  • ยผ cup cookie butter, melted (40g)
  • 1 large egg
  • ยพ cup brown sugar (140g)
  • ยฝ cup desiccated coconut (55g)
  • 1 ยผ cup rolled oats (110g)
  • 1 โ…“ cup all-purpose flour (165g)
  • 1 ยฝ tsp baking powder
  • 1 tsp cinnamon
  • ยฝ cup cookie butter (80g)
  • Caramel Filling: ยฝ cup sweetened condensed milk (195g), โ…“ cup butter (75g), 3 tbsp golden syrup (66g, or brown sugar), ยฝ tsp vanilla extract


Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC) and line a baking pan with parchment paper.
  2. In a large bowl, mix melted butter, melted cookie butter, egg, and brown sugar until smooth.
  3. Add desiccated coconut, rolled oats, flour, baking powder, and cinnamon. Stir until combined.
  4. Press half of the oat mixture into the prepared pan to form the base layer.
  5. In a small saucepan, combine condensed milk, butter, and golden syrup over medium heat. Stir until smooth and slightly thickened. Remove from heat and add vanilla extract.
  6. Spread the caramel filling over the base layer, then sprinkle the remaining oat mixture on top and lightly press down.
  7. Bake for 25โ€“30 minutes or until golden brown. Let cool completely before cutting into bars.
