Description
Delicious Cookie Butter Oatmeal Bars with a rich caramel filling. Chewy, sweet, and perfect for dessert or a snack.
Ingredients
- โ cup + 1 tbsp butter, melted (90g)
- ยผ cup cookie butter, melted (40g)
- 1 large egg
- ยพ cup brown sugar (140g)
- ยฝ cup desiccated coconut (55g)
- 1 ยผ cup rolled oats (110g)
- 1 โ cup all-purpose flour (165g)
- 1 ยฝ tsp baking powder
- 1 tsp cinnamon
- ยฝ cup cookie butter (80g)
- Caramel Filling: ยฝ cup sweetened condensed milk (195g), โ cup butter (75g), 3 tbsp golden syrup (66g, or brown sugar), ยฝ tsp vanilla extract
Instructions
- Preheat the oven to 350ยฐF (175ยฐC) and line a baking pan with parchment paper.
- In a large bowl, mix melted butter, melted cookie butter, egg, and brown sugar until smooth.
- Add desiccated coconut, rolled oats, flour, baking powder, and cinnamon. Stir until combined.
- Press half of the oat mixture into the prepared pan to form the base layer.
- In a small saucepan, combine condensed milk, butter, and golden syrup over medium heat. Stir until smooth and slightly thickened. Remove from heat and add vanilla extract.
- Spread the caramel filling over the base layer, then sprinkle the remaining oat mixture on top and lightly press down.
- Bake for 25โ30 minutes or until golden brown. Let cool completely before cutting into bars.
Notes
- Use high-quality cookie butter for the best flavor.
- Bars can be stored in an airtight container at room temperature for up to 4 days.
- Optional: drizzle melted chocolate over cooled bars for extra indulgence.
