Description

Coconut Lime Chicken and Rice is a bright, zesty one-pan meal featuring tender chicken breasts cooked in a creamy coconut-lime sauce over fluffy basmati rice. Fresh cilantro and a touch of honey balance the flavors perfectly.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 ยฝ cups coconut milk, full-fat
  • 1 cup basmati rice
  • 1 ยฝ cups water
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp cumin, ground
  • 1 tsp coriander, ground
  • 1 tsp salt
  • ยผ tsp black pepper
  • 3 limes, zest of
  • ยผ cup lime juice + 2 tbsp fresh lime juice
  • 1 tbsp honey
  • 2 tbsp fresh cilantro, chopped (plus extra for garnish)


Instructions

  1. Season chicken breasts with salt, black pepper, cumin, and coriander.
  2. Heat olive oil in a large skillet over medium heat. Sear chicken 3โ€“4 minutes per side until golden but not fully cooked. Remove and set aside.
  3. In the same skillet, add garlic and sautรฉ for 30 seconds. Stir in coconut milk, water, lime juice, lime zest, and honey.
  4. Add rice to the skillet, stir, then place chicken on top. Bring to a boil, cover, reduce heat to low, and simmer 18โ€“20 minutes until rice is cooked and chicken is fully cooked.
  5. Remove from heat, stir in chopped cilantro, and let rest 5 minutes before serving.
  6. Garnish with extra fresh cilantro and serve warm.
