Description
Coconut Lime Chicken and Rice is a bright, zesty one-pan meal featuring tender chicken breasts cooked in a creamy coconut-lime sauce over fluffy basmati rice. Fresh cilantro and a touch of honey balance the flavors perfectly.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 ยฝ cups coconut milk, full-fat
- 1 cup basmati rice
- 1 ยฝ cups water
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp cumin, ground
- 1 tsp coriander, ground
- 1 tsp salt
- ยผ tsp black pepper
- 3 limes, zest of
- ยผ cup lime juice + 2 tbsp fresh lime juice
- 1 tbsp honey
- 2 tbsp fresh cilantro, chopped (plus extra for garnish)
Instructions
- Season chicken breasts with salt, black pepper, cumin, and coriander.
- Heat olive oil in a large skillet over medium heat. Sear chicken 3โ4 minutes per side until golden but not fully cooked. Remove and set aside.
- In the same skillet, add garlic and sautรฉ for 30 seconds. Stir in coconut milk, water, lime juice, lime zest, and honey.
- Add rice to the skillet, stir, then place chicken on top. Bring to a boil, cover, reduce heat to low, and simmer 18โ20 minutes until rice is cooked and chicken is fully cooked.
- Remove from heat, stir in chopped cilantro, and let rest 5 minutes before serving.
- Garnish with extra fresh cilantro and serve warm.

- Use full-fat coconut milk for a richer, creamier flavor.
- Adjust lime juice to taste for more tang.
