Ingredients
Sweet Potato Filling
- 4 cups (960 g) cooked and mashed sweet potatoes (about 4 large potatoes)
- 1/2 cup (115 g) unsalted butter, melted
- 1/2 cup (120 ml) evaporated milk or whole milk
- 2 large eggs, lightly beaten
- 1/2 cup (110 g) light brown sugar, packed
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
Pecan Streusel Topping
- 1/2 cup (60 g) all-purpose flour
- 1/2 cup (110 g) light brown sugar, packed
- 1/4 cup (55 g) cold unsalted butter, cubed
- 1 cup (115 g) chopped pecans
Instructions
- Preheat oven to 350ยฐF (175ยฐC) and grease a 9×13-inch baking dish.
- In a large bowl, mix mashed sweet potatoes with melted butter, milk, eggs, brown sugar, vanilla, cinnamon, nutmeg, and salt until smooth.
- Spread sweet potato mixture evenly into the prepared baking dish.
- In a separate bowl, combine flour, brown sugar, butter, and pecans to form the topping. Sprinkle evenly over the sweet potato mixture.
- Bake for 30โ35 minutes until the topping is golden and casserole is heated through.
- Cool slightly before serving.
Notes
- For extra flavor, add a pinch of ginger or allspice to the sweet potato filling.
- Can be made a day ahead and reheated before serving.
- Use fresh or canned sweet potatoes according to preference.
