Ingredients
- 1 lb chicken tenderloins, cooked and diced (or chicken breast/rotisserie chicken)
- 1 can black beans, 14.5 oz
- 1 can diced tomatoes, 14.5 oz
- 1 small white onion, diced
- 1 red bell pepper, diced
- ยฝ packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 lime, juiced
- 2 tbsp green onions, diced
- Cooking spray
- To Serve: sour cream, avocado slices, jalapeรฑo slices, tortilla chips, salsa
Instructions
- Preheat oven to 375ยฐF (190ยฐC) and lightly grease a baking dish with cooking spray.
- In a large bowl, combine cooked chicken, black beans, diced tomatoes, onion, red bell pepper, taco seasoning, shredded cheddar, sour cream, lime juice, and green onions. Mix until evenly combined.
- Transfer mixture to the prepared baking dish and spread evenly.
- Bake uncovered for 20โ25 minutes until heated through and cheese is melted.
- Serve hot with optional toppings: sour cream, avocado slices, jalapeรฑo slices, tortilla chips, and salsa.
