Ingredients

  • 1 lb chicken tenderloins, cooked and diced (or chicken breast/rotisserie chicken)
  • 1 can black beans, 14.5 oz
  • 1 can diced tomatoes, 14.5 oz
  • 1 small white onion, diced
  • 1 red bell pepper, diced
  • ยฝ packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 lime, juiced
  • 2 tbsp green onions, diced
  • Cooking spray
  • To Serve: sour cream, avocado slices, jalapeรฑo slices, tortilla chips, salsa


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC) and lightly grease a baking dish with cooking spray.
  2. In a large bowl, combine cooked chicken, black beans, diced tomatoes, onion, red bell pepper, taco seasoning, shredded cheddar, sour cream, lime juice, and green onions. Mix until evenly combined.
  3. Transfer mixture to the prepared baking dish and spread evenly.
  4. Bake uncovered for 20โ€“25 minutes until heated through and cheese is melted.
  5. Serve hot with optional toppings: sour cream, avocado slices, jalapeรฑo slices, tortilla chips, and salsa.
