Ingredients
- Sauce and Broth Base:

- 1/4 cup DeLallo Tomato Paste
- 1/2 tsp Italian seasoning
- 4 cups chicken broth
- Salt to taste
- Pasta and Protein:
- 1 cup DeLallo Orzo Pasta
- 2 cups chopped or shredded cooked chicken (rotisserie chicken recommended)
- Finishing Ingredients:
- 1/4 cup heavy cream
- 1–2 cups water, as needed for desired consistency
- Parmesan cheese, herbs (parsley or basil), red pepper flakes, and lemon for serving
- Bread for serving
- Pesto (optional; see notes)
Instructions
- Heat olive oil in a large pot over medium heat. Add garlic and sauté until fragrant, about 1 minute.
- Stir in tomato paste and Italian seasoning, cooking for another minute.
- Add chicken broth and bring to a gentle boil.
- Add orzo pasta and cooked chicken, reduce heat to a simmer, and cook until orzo is tender, about 8–10 minutes.
- Stir in heavy cream and water to reach desired consistency. Adjust salt to taste.
- Ladle soup into bowls and top with Parmesan, fresh herbs, red pepper flakes, and a squeeze of lemon.
- Serve with crusty bread and optional pesto on the side.
