Ingredients

  • 2 tbsp DeLallo Private Reserve Extra Virgin Olive Oil
  • 4 cloves garlic, thinly sliced or minced
  • 1/4 cup DeLallo Tomato Paste
  • 1/2 tsp Italian seasoning
  • 4 cups chicken broth
  • Salt to taste
  • Pasta and Protein:
  • 1 cup DeLallo Orzo Pasta
  • 2 cups chopped or shredded cooked chicken (rotisserie chicken recommended)
  • Finishing Ingredients:
  • 1/4 cup heavy cream
  • 12 cups water, as needed for desired consistency
  • Parmesan cheese, herbs (parsley or basil), red pepper flakes, and lemon for serving
  • Bread for serving
  • Pesto (optional; see notes)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add garlic and sauté until fragrant, about 1 minute.
  2. Stir in tomato paste and Italian seasoning, cooking for another minute.
  3. Add chicken broth and bring to a gentle boil.
  4. Add orzo pasta and cooked chicken, reduce heat to a simmer, and cook until orzo is tender, about 8–10 minutes.
  5. Stir in heavy cream and water to reach desired consistency. Adjust salt to taste.
  6. Ladle soup into bowls and top with Parmesan, fresh herbs, red pepper flakes, and a squeeze of lemon.
  7. Serve with crusty bread and optional pesto on the side.
