Chicken Bell Pepper Ranch Burritos are a flavorful and easy meal featuring tender chicken, sautéed bell peppers, ranch dressing, cheddar cheese, and rice, all wrapped in a soft flour tortilla.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breast, thinly sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1 cup cooked rice
  • 4 large flour tortillas
  • 1/4 cup chopped fresh cilantro (optional)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken and season with garlic powder, onion powder, smoked paprika, chili powder, salt, and pepper. Cook until chicken is browned and cooked through.
  2. Add red and green bell peppers to the skillet and sauté until slightly softened.
  3. Stir in ranch dressing, cooked rice, and shredded cheddar cheese until well combined and heated through.
  4. Warm the flour tortillas in a dry skillet or microwave.
  5. Divide the chicken and pepper mixture among the tortillas and roll up to form burritos.
  6. Optional: garnish with chopped fresh cilantro before serving.
