Chicken Bell Pepper Ranch Burritos are a flavorful and easy meal featuring tender chicken, sautéed bell peppers, ranch dressing, cheddar cheese, and rice, all wrapped in a soft flour tortilla.
Ingredients
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breast, thinly sliced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1/2 cup ranch dressing
- 1 cup shredded cheddar cheese
- 1 cup cooked rice
- 4 large flour tortillas
- 1/4 cup chopped fresh cilantro (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add chicken and season with garlic powder, onion powder, smoked paprika, chili powder, salt, and pepper. Cook until chicken is browned and cooked through.
- Add red and green bell peppers to the skillet and sauté until slightly softened.
- Stir in ranch dressing, cooked rice, and shredded cheddar cheese until well combined and heated through.
- Warm the flour tortillas in a dry skillet or microwave.
- Divide the chicken and pepper mixture among the tortillas and roll up to form burritos.
- Optional: garnish with chopped fresh cilantro before serving.
Notes
- Use leftover cooked rice to save time.
- For extra flavor, add sliced jalapeños or hot sauce.
- These burritos can be made ahead and stored in the fridge for 1–2 days.
