Ingredients
- 1.5 pounds chicken thighs or breasts
- 6 cloves garlic, minced
- 1 medium yellow onion, finely chopped
- 2 tablespoons butter (divided)
- 2 tablespoons all-purpose flour
- 1.5 cups chicken broth
- 2 pounds Yukon Gold or Russet potatoes, peeled and cubed
- 1 cup shredded cheddar cheese
- 0.5 cup milk or heavy cream (warmed)
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- In a large skillet, melt 1 tablespoon butter and cook chicken until browned and cooked through. Remove and set aside.
- In the same skillet, add remaining butter, sautรฉ onions and garlic until fragrant.
- Sprinkle flour over onions and garlic and cook for 1โ2 minutes to form a roux.
- Gradually whisk in chicken broth, simmer until thickened. Return chicken to skillet, coat with gravy, and heat through.
- Meanwhile, boil potatoes until tender, drain, and mash with cheese, milk, salt, and pepper until creamy.
- Serve chicken with garlic gravy over cheesy mashed potatoes, garnish with parsley.
