Ingredients

  • 1.5 pounds chicken thighs or breasts
  • 6 cloves garlic, minced
  • 1 medium yellow onion, finely chopped
  • 2 tablespoons butter (divided)
  • 2 tablespoons all-purpose flour
  • 1.5 cups chicken broth
  • 2 pounds Yukon Gold or Russet potatoes, peeled and cubed
  • 1 cup shredded cheddar cheese
  • 0.5 cup milk or heavy cream (warmed)
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon fresh parsley, chopped (optional)


Instructions

  1. In a large skillet, melt 1 tablespoon butter and cook chicken until browned and cooked through. Remove and set aside.
  2. In the same skillet, add remaining butter, sautรฉ onions and garlic until fragrant.
  3. Sprinkle flour over onions and garlic and cook for 1โ€“2 minutes to form a roux.
  4. Gradually whisk in chicken broth, simmer until thickened. Return chicken to skillet, coat with gravy, and heat through.
  5. Meanwhile, boil potatoes until tender, drain, and mash with cheese, milk, salt, and pepper until creamy.
  6. Serve chicken with garlic gravy over cheesy mashed potatoes, garnish with parsley.
