Ingredients

  • 1 lb chicken fillets, diced
  • 4 garlic cloves, minced
  • 3 1/2 oz fresh spinach
  • 1 yellow onion, diced
  • 4 cups chicken broth
  • 8 oz pasta
  • 1 tsp Italian seasoning
  • Black pepper, freshly ground, to taste
  • 1 tbsp unsalted butter
  • 2 cups heavy cream
  • 1 cup Parmesan cheese, grated


Instructions

  1. In a large pot, melt butter over medium heat. Sautรฉ garlic and onions until fragrant and softened, about 3โ€“4 minutes.
  2. Add diced chicken and cook until no longer pink, about 5โ€“6 minutes.
  3. Pour in chicken broth and bring to a simmer. Add pasta and cook until tender according to package instructions.
  4. Stir in heavy cream, Italian seasoning, black pepper, and Parmesan cheese. Cook for an additional 3โ€“5 minutes until soup is creamy and slightly thickened.
  5. Add fresh spinach and stir until wilted.
  6. Serve hot and garnish with extra Parmesan if desired.

Notes

  • Use any pasta shape you prefer, small shapes like rotini or penne work best.
  • Leftovers can be stored in the fridge for up to 3 days. Reheat gently to avoid separating the cream.
