Ingredients
- 1 lb chicken fillets, diced
- 4 garlic cloves, minced
- 3 1/2 oz fresh spinach
- 1 yellow onion, diced
- 4 cups chicken broth
- 8 oz pasta
- 1 tsp Italian seasoning
- Black pepper, freshly ground, to taste
- 1 tbsp unsalted butter
- 2 cups heavy cream
- 1 cup Parmesan cheese, grated
Instructions
- In a large pot, melt butter over medium heat. Sautรฉ garlic and onions until fragrant and softened, about 3โ4 minutes.
- Add diced chicken and cook until no longer pink, about 5โ6 minutes.
- Pour in chicken broth and bring to a simmer. Add pasta and cook until tender according to package instructions.
- Stir in heavy cream, Italian seasoning, black pepper, and Parmesan cheese. Cook for an additional 3โ5 minutes until soup is creamy and slightly thickened.
- Add fresh spinach and stir until wilted.
- Serve hot and garnish with extra Parmesan if desired.
Notes
- Use any pasta shape you prefer, small shapes like rotini or penne work best.
- Leftovers can be stored in the fridge for up to 3 days. Reheat gently to avoid separating the cream.
- For extra flavor, add a pinch of nutmeg or red pepper flakes.
