Ingredients
- For the Muffins:
- 1 3/4 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/3 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup pitted fresh cherries (or frozen cherries, thawed and drained)
- For the Cobbler Topping:
- 1/2 cup all-purpose flour
- 1/3 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 cup cold unsalted butter, diced
Instructions
- Preheat oven to 375ยฐF (190ยฐC) and line a 12-cup muffin tin with paper liners or grease well.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, combine milk, vegetable oil, egg, and vanilla extract.
- Add wet ingredients to dry ingredients and mix until just combined. Gently fold in cherries.
- Divide batter evenly among muffin cups.
- For the cobbler topping, mix flour, brown sugar, and cinnamon, then cut in cold butter until crumbly. Sprinkle evenly over muffins.
- Bake 20โ25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow muffins to cool slightly before serving.
Notes
- Use fresh cherries for the best flavor, or frozen cherries (thawed) when fresh are not available.
- Optional: Drizzle with a simple glaze made of powdered sugar and milk for extra sweetness.
