Ingredients

  • 2 pounds russet potatoes, peeled and small diced
  • 3โ€“4 tablespoons oil
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 pound ground beef
  • 1 packet taco seasoning
  • Water, as directed on taco seasoning packet
  • 8 ounce bag Mexican shredded cheese
  • Optional toppings: pico de gallo, guacamole, sour cream


Instructions

  1. Preheat oven to 400ยฐF (200ยฐC) if baking potatoes, or prepare a skillet for stovetop cooking.
  2. Toss diced potatoes with oil, salt, pepper, garlic powder, and onion powder.
  3. Cook potatoes until tender, either roasting in the oven for 20โ€“25 minutes or sautรฉing in a skillet over medium heat.
  4. In a separate pan, cook ground beef until browned. Add taco seasoning and water according to packet instructions, simmer until thickened.
  5. Combine cooked potatoes and seasoned beef, then top with shredded Mexican cheese.
  6. Optional: garnish with pico de gallo, guacamole, and sour cream before serving.
