Ingredients

  • 2 cups cooked rice (white or brown)
  • 2 cups cooked, shredded chicken (rotisserie chicken works well)
  • 1ยฝ cups salsa (mild, medium, or hot)
  • 1 cup corn (canned or frozen)
  • 1 cup black beans (canned, rinsed and drained)
  • 1ยฝ cups shredded cheddar cheese (or cheese blend)
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • ยฝ teaspoon onion powder
  • ยฝ teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)
  • 1 tablespoon olive oil (for greasing)


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC) and grease a 9×13-inch baking dish with olive oil.
  2. In a large bowl, combine cooked rice, shredded chicken, salsa, corn, black beans, spices, and 1 cup of shredded cheese. Mix well.
  3. Transfer mixture to prepared baking dish and spread evenly.
  4. Sprinkle remaining ยฝ cup shredded cheese on top.
