Ingredients
- 2 cups cooked rice (white or brown)
- 2 cups cooked, shredded chicken (rotisserie chicken works well)
- 1ยฝ cups salsa (mild, medium, or hot)
- 1 cup corn (canned or frozen)
- 1 cup black beans (canned, rinsed and drained)
- 1ยฝ cups shredded cheddar cheese (or cheese blend)
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- ยฝ teaspoon onion powder
- ยฝ teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
- 1 tablespoon olive oil (for greasing)
Instructions
- Preheat oven to 375ยฐF (190ยฐC) and grease a 9×13-inch baking dish with olive oil.
- In a large bowl, combine cooked rice, shredded chicken, salsa, corn, black beans, spices, and 1 cup of shredded cheese. Mix well.
- Transfer mixture to prepared baking dish and spread evenly.
- Sprinkle remaining ยฝ cup shredded cheese on top.
- Bake for 20โ25 minutes, until cheese is melted and dish is heated through.
- Garnish with fresh cilantro before serving, if desired.

- For extra flavor, use a mix of cheddar and Monterey Jack cheese.
