Ingredients
- 1 lb lean ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups cooked white rice
- 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
- ยฝ cup milk or beef broth
- 2 cups shredded cheddar cheese (divided)
- 1 teaspoon paprika
- Salt and pepper to taste
- Optional: chopped parsley for garnish
Instructions
- Preheat oven to 375ยฐF (190ยฐC).
- In a large skillet over medium heat, cook ground beef and onion until browned. Drain excess fat.
- Add garlic and cook for 1 minute until fragrant.
- Stir in cooked rice, cream of mushroom soup, milk (or broth), paprika, salt, pepper, and 1 cup shredded cheddar cheese.
- Mix until well combined and heated through.
- Transfer mixture to a greased baking dish.
- Top with remaining 1 cup cheddar cheese.
- Bake for 20โ25 minutes, until bubbly and cheese is melted and golden.
- Garnish with parsley if desired and serve warm.
Notes
- Add frozen peas, corn, or diced bell peppers for extra vegetables.
- Swap cheddar with mozzarella or a cheese blend if preferred.
- Leftovers can be stored in the refrigerator for up to 3 days.
