Description

This Cheesy Ground Beef and Rice Casserole is a comforting, family-friendly dish made with seasoned beef, creamy sauce, tender rice, and plenty of melted cheddar cheese. Itโ€™s simple, hearty, and perfect for busy weeknights.


Ingredients

  • 1 lb lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked white rice
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • ยฝ cup milk or beef broth
  • 2 cups shredded cheddar cheese (divided)
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC).
  2. In a large skillet over medium heat, cook ground beef and onion until browned. Drain excess fat.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Stir in cooked rice, cream of mushroom soup, milk (or broth), paprika, salt, pepper, and 1 cup shredded cheddar cheese.
  5. Mix until well combined and heated through.
  6. Transfer mixture to a greased baking dish.
  7. Top with remaining 1 cup cheddar cheese.
  8. Bake for 20โ€“25 minutes, until bubbly and cheese is melted and golden.
  9. Garnish with parsley if desired and serve warm.

  • Add frozen peas, corn, or diced bell peppers for extra vegetables.
  • Swap cheddar with mozzarella or a cheese blend if preferred.
