Ingredients

  • 1 lb ground beef
  • 1 (9 oz) package cheese tortellini
  • 1 (10 oz) can red enchilada sauce
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup shredded Mexican blend cheese
  • 1/4 cup chopped fresh cilantro (optional for garnish)
  • Sour cream (optional for serving)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  3. Add chili powder, cumin, garlic powder, onion powder, salt, and pepper to the beef. Stir to combine.
  4. Cook tortellini according to package instructions, then drain and add to the skillet with beef.
  5. Pour in red enchilada sauce and salsa. Stir until everything is well coated.
  6. Transfer mixture to a greased baking dish and top with shredded Mexican blend cheese.
  7. Bake for 15–20 minutes until cheese is melted and bubbly.
  8. Garnish with chopped cilantro and serve with sour cream if desired.

Notes

  • You can use store-bought rotisserie chicken instead of ground beef for a different twist.
