Ingredients
- 1 lb ground beef
- 1 (9 oz) package cheese tortellini
- 1 (10 oz) can red enchilada sauce
- 1 cup salsa
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- 1 cup shredded Mexican blend cheese
- 1/4 cup chopped fresh cilantro (optional for garnish)
- Sour cream (optional for serving)
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
- Add chili powder, cumin, garlic powder, onion powder, salt, and pepper to the beef. Stir to combine.
- Cook tortellini according to package instructions, then drain and add to the skillet with beef.
- Pour in red enchilada sauce and salsa. Stir until everything is well coated.
- Transfer mixture to a greased baking dish and top with shredded Mexican blend cheese.
- Bake for 15–20 minutes until cheese is melted and bubbly.
- Garnish with chopped cilantro and serve with sour cream if desired.
Notes
- You can use store-bought rotisserie chicken instead of ground beef for a different twist.
- For extra spice, add a pinch of cayenne pepper.
- Leftovers store well in the refrigerator for up to 3 days and reheat in the oven or microwave.
