Description

These Cheddar Egg Quesadillas are a quick, satisfying breakfast or brunch option. Fluffy eggs, melted sharp cheddar, and crisp tortillas make every bite delicious and hearty.


Ingredients

  • 4 Large Flour Tortillas (8โ€“10 inch)
  • 8 Large Eggs
  • 2 Tablespoons Milk or Heavy Cream
  • 2 Cups Shredded Sharp Cheddar Cheese
  • 2 Tablespoons Unsalted Butter
  • ยฝ Teaspoon Salt
  • ยผ Teaspoon Black Pepper


Instructions

  1. In a medium bowl, whisk together eggs, milk or cream, salt, and pepper.
  2. Heat 1 tablespoon butter in a skillet over medium heat. Pour in the egg mixture and cook, gently stirring, until eggs are soft and fluffy. Remove from heat.
  3. Place a tortilla on a clean skillet over medium heat. Sprinkle half of the cheese over the tortilla, then spread cooked eggs evenly. Top with remaining cheese and another tortilla.
  4. Cook for 2โ€“3 minutes per side, until the tortillas are golden brown and cheese is melted.
  5. Repeat for remaining tortillas and filling. Slice into wedges and serve warm.
