These Cheddar Egg Quesadillas are a quick, satisfying breakfast or brunch option. Fluffy eggs, melted sharp cheddar, and crisp tortillas make every bite delicious and hearty.
Ingredients
- 4 Large Flour Tortillas (8โ10 inch)
- 8 Large Eggs
- 2 Tablespoons Milk or Heavy Cream
- 2 Cups Shredded Sharp Cheddar Cheese
- 2 Tablespoons Unsalted Butter
- ยฝ Teaspoon Salt
- ยผ Teaspoon Black Pepper
Instructions
- In a medium bowl, whisk together eggs, milk or cream, salt, and pepper.
- Heat 1 tablespoon butter in a skillet over medium heat. Pour in the egg mixture and cook, gently stirring, until eggs are soft and fluffy. Remove from heat.
- Place a tortilla on a clean skillet over medium heat. Sprinkle half of the cheese over the tortilla, then spread cooked eggs evenly. Top with remaining cheese and another tortilla.
- Cook for 2โ3 minutes per side, until the tortillas are golden brown and cheese is melted.
- Repeat for remaining tortillas and filling. Slice into wedges and serve warm.
Notes
- Add sautรฉed vegetables, cooked bacon, or avocado slices for extra flavor.
- Serve with salsa, sour cream, or hot sauce if desired.
- These quesadillas can be made ahead and reheated in a skillet or oven.
