A comforting chicken casserole topped with Cheddar Bay Biscuits, loaded with vegetables, creamy sauce, and shredded cheddar cheese. Perfect for family dinners!
Ingredients
- 2 cups cooked, shredded chicken
- 1 packet Cheddar Bay Biscuit mix (plus ingredients listed on packet)
- 1 1/2 cups milk
- 1 cup chicken broth
- 1 cup frozen mixed vegetables
- 1/2 cup sour cream
- 1 can cream of chicken soup
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1 tbsp fresh parsley (optional)
- 1 1/2 cups shredded cheddar cheese
- 2 tbsp butter, melted
Instructions
- Preheat oven according to Cheddar Bay Biscuit mix instructions.
- In a large bowl, combine shredded chicken, mixed vegetables, sour cream, cream of chicken soup, garlic powder, black pepper, chicken broth, and 1 cup milk. Mix well.
- Pour mixture into a greased baking dish.
- Prepare Cheddar Bay Biscuit mix as directed on packet, adding 1/2 cup milk and any other ingredients per instructions.
- Drop biscuit dough evenly over chicken mixture. Sprinkle shredded cheddar cheese over the top and drizzle with melted butter.
- Bake according to biscuit mix instructions until biscuits are golden and casserole is bubbly, about 20โ25 minutes.
- Garnish with fresh parsley if desired. Serve warm.
Notes
- You can add extra vegetables like peas or carrots for more color and nutrition.
- Leftovers can be stored in the fridge for up to 3 days and reheated in the oven.
- Substitute chicken with rotisserie chicken for convenience.
