Cashew Chicken is a classic stir-fry dish featuring tender chicken pieces, crunchy roasted cashews, and a flavorful sauce made with soy, honey, hoisin, and ginger, perfect for a quick and satisfying dinner.
Ingredients
- 1 pound chicken thighs or breasts, cut into bite-sized pieces
- ยผ cup cornstarch
- 3 tablespoons oil
- 1 teaspoon minced ginger
- 2 cloves garlic, minced
- 1 cup unsalted roasted cashews
- ยฝ cup sliced green onions
- For the sauce: ยผ cup chicken stock, 2 tablespoons soy sauce, 2 tablespoons honey, 2 teaspoons hoisin sauce, 1 teaspoon cornstarch, ยฝ teaspoon rice wine vinegar
Instructions
- Toss chicken pieces with ยผ cup cornstarch until evenly coated.
- Heat oil in a large skillet or wok over medium-high heat. Cook chicken until golden and cooked through, then remove from pan.
- In the same skillet, add ginger and garlic; sautรฉ for 30 seconds until fragrant.
- Stir in cashews and green onions, then return chicken to the pan.
- Mix sauce ingredients in a small bowl, then pour over chicken. Cook 2โ3 minutes until sauce thickens and coats the chicken and cashews.
- Serve hot with steamed rice or noodles.

- Use chicken breast for a leaner version.
- Add bell peppers or snap peas for extra vegetables.
