Ingredients

  • 1 pound chicken thighs or breasts, cut into bite-sized pieces
  • ยผ cup cornstarch
  • 3 tablespoons oil
  • 1 teaspoon minced ginger
  • 2 cloves garlic, minced
  • 1 cup unsalted roasted cashews
  • ยฝ cup sliced green onions
  • For the sauce: ยผ cup chicken stock, 2 tablespoons soy sauce, 2 tablespoons honey, 2 teaspoons hoisin sauce, 1 teaspoon cornstarch, ยฝ teaspoon rice wine vinegar


Instructions

  1. Toss chicken pieces with ยผ cup cornstarch until evenly coated.
  2. Heat oil in a large skillet or wok over medium-high heat. Cook chicken until golden and cooked through, then remove from pan.
  3. In the same skillet, add ginger and garlic; sautรฉ for 30 seconds until fragrant.
  4. Stir in cashews and green onions, then return chicken to the pan.
  5. Mix sauce ingredients in a small bowl, then pour over chicken. Cook 2โ€“3 minutes until sauce thickens and coats the chicken and cashews.
  6. Serve hot with steamed rice or noodles.
